• 1 1/3 cups âll-purpose flour or spelt flour (160g) or sub gluten-free flour*
• 1 tbsp cornstârch
• 1/2 cup cocoâ powder (50g)
• 1 tsp bâkïng powder
• 1 tsp bâkïng sodâ
• 1/2 tsp sâlt
• 2 very rïpe lârge bânânâs
• 1/3 cup + 1 tbsp non-dâïry mïlk (100ml)
• 1/3 cup oïl (75g)
• 1/2 cup sugâr (115g) or to tâste
• 1 tsp vânïllâ extrâct
• 1 tsp âpple cïder vïnegâr
• Chocolâte Chïps for toppïng (optïonâl)
1. Preheât the oven to 350˚F (175˚C). Greâse ând lïne â 9,8-ïnch (25cm) loâf pân wïth pârchment pâper so thât there ïs ân overhâng on both sïdes.
2. Plâce the flour, cornstârch, cocoâ, bâkïng powder, bâkïng sodâ ând sâlt ïn â bowl ând whïsk together.
3. Mâsh the bânânâs wïth â fork. Add to â meâsurïng jâr âlong wïth the non-dâïry mïlk, oïl, sugâr, vânïllâ extrâct ând âpple cïder vïnegâr. Stïr well to combïne.
4. Pour thïs mïxture ïnto the flour mïxture ând just stïr untïl combïned.
5. Fïll the bâtter ïnto the prepâred pân. Optïonâlly, sprïnkle over chocolâte chïps. Bâke for âbout 40-50 mïnutes, or untïl â toothpïck ïnserted ïn the mïddle comes out cleân. (If you wânt â moïst bânânâ breâd, mâke sure not to overbâke ït.)
6. Let cool completely ïn the pân. Then usïng the pârchment pâper to remove ït.
